Yes, you are able to exclude one employee for a task.
To learn how to exclude an employee from a task, follow these steps and a video is also shown below.
1. Go to the Admin dashboard. User Settings - Onboardees / Offboardees.
2. Select the employee.
3. Click on Action and click on Edit
4. There's a ticking box that states 'Exclude from the task module'
5. Click on this option if you do not want this specific onboardee to have a task
